THE PERFECT CEVICHE

 

Ceviche is a traditional dish widely consumed in Peru and the world. In Peru, ceviche has been declaredpart of Peru's "national heritage" and a holiday has been declared in its honor.

The traditional Peruvian ceviche is prepared with fresh fish, lemons, onions, hot peppers, and fresh coriander. The classic and traditional Peruvian fish ceviche is prepared with raw fresh fish and must be tanned in lemon juice.
